Ingredients and Equipment

To get started, you'll need:

1 gallon of clean water

Black tea (such as PG Tips)

1 cup cane sugar

1 SCOBY (Symbiotic Culture of Bacteria and Yeast)

And for equipment:

Step-by-Step Fermentation Process

    1. Brew the Base Tea
      Boil the gallon of water and steep eight black tea bags for 10–15 minutes. Allow the tea to cool to room temperature.
    2. Add Sugar & Transfer
      Pour the cooled tea into the keg vessel and mix in one cup of cane sugar until fully dissolved.
    3. Introduce the SCOBY
      Gently place your SCOBY into the keg.
    4. Set Up for Fermentation
      Close the lid and keep the pressure relief valve open during initial fermentation. On the iGulu system, set the fermentation temperature to 68–69°F (20–21°C) and allow it to ferment for around 10 days.

Optional: Flavor with Secondary Fermentation

Want to personalize your kombucha? Try a lemon-ginger twist during secondary fermentation:

    1. Juice 4 lemons, finely chop 1 tablespoon of fresh ginger, and mix with 4 tablespoons of honey.
    2. Remove the SCOBY and store it safely with some reserved liquid.
    3. Add the flavor blend to the fermented kombucha, close the relief valve, and ferment for an additional 5–10 days at 68°F.

Taste & Serve

    • Taste Test: Check the balance of tanginess and sweetness. Adjust with natural flavorings if desired.
    • Chill: Refrigerate your kombucha for optimal taste and to slow fermentation.
    • Serve: Use CO₂ mode for a fizzy drink, or switch to air pump mode for a still version.
